These peppermint hot chocolate cookies are a sweet chocolate cookie filled with chocolate chips, gooey marshmallows and little bits of peppermint candies. They are the perfect festive cookie!

Ingredient Notes
Full ingredient measurements and instructions can be found in the recipe card below.
- Butter: I always use salted butter, but unsalted is fine too.
- Cocoa Powder: I used basic cocoa powder, but dutch process would be good as well.
- Marshmallows: Just the regular mini ones from the store.
- Crushed Peppermint Candies: I just took a rolling pin and broke up some candy canes.
- Chocolate Chips: I used semi-sweet, but white chocolate or milk chocolate are great too.

Recipe Instructions
Step 1: In a medium bowl whisk together flour, cocoa powder, cornstarch, baking soda and salt. Set aside.
Step 2: In a large mixing bowl fitted with the paddle attachment, cream together butter and sugars on medium speed until light and fluffy. About 3 minutes. Add the egg and vanilla and mix again.


Step 3: Slowly add dry ingredients until just mixed together. Do not over mix dry ingredients. Fold in all chocolate chips, marshmallows and peppermint candies.


Step 4: Scoop dough using a ¼ cup cookie scoop. Cover and chill dough for 2-24 hours.
Step 5: Preheat oven to 375 F. Line 2 baking sheets with parchment paper.
Step 6: Bake 6-8 cookies per sheet for 11-13 minutes, or until edges look cooked. Allow to cool.


Expert Baking Tips
- Because of the marshmallows and candies the cookies will spread more in some areas, just grab a spatula or a spoon and push in any areas that spread too far right when they come out.
- These cookies are also really good with white chocolate chips in them.
- I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

Storing & Freezing
Peppermint hot chocolate cookies will remain fresh if stored in an airtight container at room temperature for 2-3 days. You can prep the cookie dough in advance and store it in the fridge for about a week.
Freeze your cookies in an airtight container for 2-3 months with them remaining fresh. You can freeze the cookie dough balls if you would like to bake them one at a time, or as needed.

Have mercy! These are delicious!! Turned out even better than I anticipated. I used half regular mini marshmallows and half peppermint mini marshmallows.
