These homemade peanut butter protein bars are a chewy protein bar filled with peanut butter, oats, coconut and chocolate. They're a knock off of my favorite G2G bars, they come together so quickly and are a great healthy option for snacking, lunches or topped on a yogurt bowl.

We love a good high protein snack at our house, and these homemade peanut butter protein bars are just that! They are gluten free, naturally sweetened and taste so delicious!

Ingredient Notes
Full ingredient measurements and instructions can be found in the recipe card below.
- Peanut Butter: I use a natural peanut butter for these. Make sure it is stirred well before adding to help control the consistency. You could also sub in other nut butters.
- Honey: I have only tried these with honey. Maple syrup might work as an alternative, although it might not hold together quite the same.
- Oil: I love using coconut oil, but you could sub in another neutral oil if preferred.
- Protein Powder: I always use Clean Simple Eats protein powder. My code: SALTEDSWEETS will get you a discount.
- Oats: I used old fashioned oats.
- Coconut: Feel free to omit if you don't like coconut.
- Flaked Salt: It tastes so good on top of these sweet bars.

Step by Step Instructions

- Step 1: Add peanut butter, oil and honey to a medium microwave safe mixing bowl. Microwave for 30-45 seconds and stir until completely mixed.

- Step 2: Add in vanilla, salt, cinnamon, flax meal, protein powder, and oats and stir until all mixed together. Fold in coconut and chocolate chips once you know the mixture isn't warm at all.

- Step 3: Press and smooth into your prepared pan. Top with a few extra chocolate chips and some flaked salt. Freeze or chill for 10-15 minutes.

- Step 4: Cut into squares or rectangles and serve. I like to put them into ziplock bags and store in my fridge for an easy grab and go snack for kids or myself.

- I have made these with vanilla, peanut butter and chocolate protein and loved them each time.
- I have only tested these using whey protein powder.

Yes, those would work great as well.
Yes, just use maple syrup and a dairy free chocolate.
Chopped nuts or seeds would be a great addition. You could also sub in cinnamon or peanut butter chips.

Storing & Freezing
These homemade peanut butter protein bars need to be stored in an air tight container in the fridge. They will remain fresh for up to a month in there.
You can also freeze these bars for up to three months in an airtight container. Allow to thaw before eating.

Homemade Peanut Butter Protein Bars
Ingredients
- ⅔ cup (172 g) creamy peanut butter I used a natural unsweetened one
- 5 tablespoons honey
- 1½ tablespoons (1.5 tablespoons) coconut oil
- 2 teaspoons vanilla
- ½ teaspoon (0.5 teaspoon) salt
- ¼ teaspoon cinnamon
- 2 tablespoons flax meal
- 2 scoops (66 g) protein powder I use Clean Simple Eats
- 1⅔ cups (175 g) old fashioned oats
- ⅓ cup (28 g) coconut
- ⅓ cup (60 g) mini chocolate chips
- flaked salt for topping
Instructions

I used Kirkland organic PB and these came out really crumbly for me - should I add water or more PB/honey? I used a scale to measure all the ingredients. They were still delicious & I’ll definitely eat (maybe like a granola)!

My guess would be to add a bit more oil. Maybe the pb you used wasn't quite as wet or liquidy as the one I have used when making these.

Yes, that should be fine! I would just avoid leaving them anywhere too warm or the chocolate might get melty.

I made this recipe for my grown up family. They loved them and very delicious. However very crumbly. I used a very oily PB and a new jar and the oil floats on top. Maybe next time a little butter of what do you recommend. X

I think it depends on what peanut butter you use. I would suggest adding a bit more oil if needed to help bind them.
