Homemade Peanut Butter Protein Bars

These homemade peanut butter protein bars are a chewy protein bar filled with peanut butter, oats, coconut and chocolate. They're a knock off of my favorite G2G bars, they come together so quickly and are a great healthy option for snacking, lunches or topped on a yogurt bowl.

Ingredients
 

  • cup (172 g) creamy peanut butter I used a natural unsweetened one
  • 5 tablespoons honey
  • tablespoons (1.5 tablespoons) coconut oil
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) salt
  • ¼ teaspoon cinnamon
  • 2 tablespoons flax meal
  • 2 scoops (66 g) protein powder I use Clean Simple Eats
  • 1⅔ cups (175 g) old fashioned oats
  • cup (28 g) coconut
  • cup (60 g) mini chocolate chips
  • flaked salt for topping

Instructions
 

  • Spray and or line an 8x8 or 9x9 pan and set aside.
  • Add peanut butter, oil and honey to a medium microwave safe mixing bowl. Microwave for 30-45 seconds and stir until completely mixed.
  • Add in vanilla, salt, cinnamon, flax meal, protein powder, and oats and stir until all mixed together. Fold in coconut and chocolate chips once you know the mixture isn't warm at all.
  • Press and smooth into your prepared pan. Top with a few extra chocolate chips and some flaked salt. Freeze or chill for 10-15 minutes.
  • Cut into squares or rectangles and serve. I like to put them into ziplock bags and store in my fridge for an easy grab and go snack for kids or myself.

I have made these with vanilla, peanut butter and chocolate protein and loved them each time.
