A single serve chocolate chip cookie without any egg. This is the perfect crispy edge, chewy center chocolate chip cookie for one, that you can whip up in one bowl when the craving hits!

This single serve chocolate chip cookie recipe can make one or two cookies in less than thirty minutes. I've made it so easy to make this in a small bowl with just a spoon and a few staple ingredients. And, most of the recipes I had come across had you using a bit of an egg, so I made this egg free to make it even easier!

Why You Will Love This Recipe
- One Cookie: Perfect when you just want one cookie!
- No Egg: So many recipes have you use a small portion of an egg, but this recipe doesn't require an egg.
- Ready in less than 30 Minutes: From start to finish you can be enjoying a fresh warm cookie in less than 30 minutes.

Ingredient Notes
Full ingredient measurements and instructions can be found in the recipe card below.
- Butter: I always use salted butter in my baking. I love the extra flavor it adds.
- Sugars: You will use brown, granulated and turbinado sugar for these. if you don't have turbinado sugar you can sub in granulated sugar.
- Milk: This will help add some binding and moisture to replace the egg. I used 2%, but whatever you have is great.
- Flour: I have tested this recipe with all-purpose and gluten free flour.
- Chocolate: My favorite combo is doing half chopped up milk chocolate bar and half semi-sweet chocolate chips.
- Flaked Salt: I can't enjoy a cookie without this!

Step by Step Instructions

- Step 1: In a small bowl mix together the melted butter and sugars. Add in vanilla and milk and mix again.

- Step 2: Mix in baking powder, baking soda, salt and flour and mix. Fold in chocolate.

- Step 3: Create one large cookie ball (or two medium) and place on the baking sheet. Chill the dough in the freezer for 5-10 minutes while the oven preheats.

- Step 4: Bake the cookie for 14-16 minutes, or until a light golden brown along the edges. Sprinkle with flaked salt as soon as it's done baking. If baking two medium cookies bake for 12-14 minutes.
Expert Baking Tips
- Be precise in your measuring! I would highly suggest using a scale for this recipe. Because it's such small amounts it's important that your measurements are spot on to ensure your cookie bakes up properly.
- If you don't have turbinado sugar sub in more granulated sugar. But the turbinado sugar is one of the reasons my salted chocolate chunk cookie recipe is so loved!
FAQ
Yes, you could bake 2-4 cookies if preferred. You'll just want ti decrease the baking time.
Yes, I have tested this with a 1:1 gluten free flour and it turned out great.

Storing & Freezing
If you wanted to make this recipe into two cookies you could either bake both cookies and save one in the freezer for later. OR you could bake one, and refrigerate or freeze the other cookie ball and bake whenever you wanted another one.

My husband and I were sick in bed with New Year’s colds when lo and behold this recipe popped up. Since the recipe only took a few minutes and ingredients to whip up, I had to try it for a little pick-me-up. These were delicious and just what we needed! As empty nesters, recipes like this one are great when you need a little something sweet but don’t necessarily want a huge batch. I did double it for two large cookies though, because we’re gluttons like that. 😃

Delicious and easy! I made one and it was massive, lol! Great for when you don't want a ton of cookies or don't have eggs!

A fun little one to kick-off the new year and another year of The Salted Cookie Club! Love that I now have the recipe to fulfill my dream when I just want one cookie! No egg makes this super quick and simple. And the one very large cookie comes out perfectly crisp on the outside and chewy in the center.
Victoria
I love this recipe is egg free! My son has an allergy to egg, and it’s difficult to find cookies recipes that are as good without egg as a traditional recipe! This was a hit! I made a double batch and made 2 giant cookies for my family to share.

I de this yesterday with my 3yo and it was so quick and easy. Loved the small-batch aspect! The cookie was perfect and my husband asked why I only made one. I will definitely be making this recipe again!

Baked this today for the Cookie Club! Came together so easily! And was delicious! I split it in 4 for dessert for my family, but easily could have eaten it all myself.

I’ve reviewed so many recipes on this blog and I genuinely don’t think I have any sub five stars under my belt. It’s ALWAYS a hit. This recipe is no exception. Super delicious, very fast, and minimal dishes. Great for the evenings where we want a little something after dinner!

Dangerous! I usually keep cookie dough balls in the freezer, but when I ran out this weekend, I tried this recipe and it is it truly just as good, or maybe even better, than a large batch recipe! Beautiful cookie (we split it into two) and wished we had more!
Bailey
The simplest recipe and always turns out SO good
Sukhmani
so glad to have this recipe in my arsenal, especially when the craving hits or I just want two cookies! I made the recipe twice this week, once using regular butter and once using plant butter. The recipe turns out great with plant butter as well, but i am a little partial to the texture i got from regular butter instead. Added walnuts to the first batch and dried strawberries + pecans to the second batch.
Bridget

This is an excellent option for when you’re trying to fulfill New Year’s resolutions and don’t want 2 dozen cookies that obviously shouldn’t be wasted over the course of a few days. I was able to have a few bites, satisfy my craving, and share with my family.
Shauna Phillips
Great recipe to have on hand for when you don’t need a lot of cookies. I used it to make 2 cookies. 1 would have been quite massive!

Oh my gosh so so good! And easy. I am never disappointed with a Salted Sweets Cookie. I love this small batch for a quick warm treat. But it might be a problem because you can’t stop eating it.

Made this along with the single serve snickerdoodle recipe. I made the choice of making 2 cookies each. They were plenty big even at this size. Love having good cookies that can be quickly consumed without sitting around tempting me!
Katie B
Love a small batch cookie! Perfect for when you have a taste for a fresh cookie but don’t want the temptation of a bunch of cookies in the house. We used white chocolate and dark chocolate and it was a great balance.

It’s snowing here on the east coast so we were looking for something to bake with our two boys (age 7 & 8) and they had a blast making their one single serve cookies together. Both of theirs turned out perfect and this recipe was easy for them to follow. Delicious and perfect chocolate chip cookie. My boys enjoyed browsing your site and pinning more recipes to try together. Thank you!
Lynn
I have made this recipe three different times for myself and to share with friends. So delicious!
Adrienne

Cassie Ducharme

Bonnie
This one definitely deserves five stars!! I’ve made a lot of chocolate chip cookies and this one is definitely my favorite recipe! I love that it has no eggs, the outside is slightly crispy in the interior is soft and delicious! My next run through with it will be to try it with gluten-free flour. I elected to make two cookies so that they didn’t have to share mine😂
Emily
This recipe was so easy! Loved the single serve aspect too, easy to finish up in one evening. I tried this twice and both times did not get the thick batter as was pictured and it did not rise much after cooking but it still tasted incredible. I baked in a skillet the second time and I feel it gave the edges a good crunch to them.
Giada
Soft in the center with perfectly crisp edges, this cookie is rich, well-balanced, and elevated by the contrast between melty chocolate and a hint of flaky sea salt. 🍪
Jamie
I have never made a cookie with turbinado sugar before but I really liked it! The texture was unique but the cookie was still thick and chewy. And loved that it was fast to throw together and there wasn't a counter full of cookies tempting me. Will make this again for sure!
Ronda Jones
This was dangerously easy and the chocolate chip cookie satisfied the chocolate craving in the best way.
Heidi M
My family says this is their new favorite cookie!! I made one batch but ended up having to make a couple batches so everyone could have their own 🙂 I substituted light brown sugar for the turbinado sugar, and they turned out PERFECTLY! Also used mini chocolate chips which was so delicious!! WILL be making these again soon!!
Rachel
So easy and delicious. I made it into 2 cookies so my daughter and I could each have one. She said "I don't really like it" as she proceeded to eat the entire thing. I'm pretty sure she enjoyed every little bite. Will be making again.
Maggie
Great cookie! I highly suggest freezing them for a bit before baking. They rise beautifully.
Anne
Ok I will be honest, I didn’t have that high of expectations for this cookie (I’m a big cookie snob haha) so I was very surprised when I made this and it was amazing! It was huge and the perfect amount of crispy and soft. And so easy to make! Perfect when you want a sweet treat without making a whole batch of cookies. I’d like to try it with other things mixed in too besides just chocolate chips.
Allison Nickelson
This is a great quick recipe when you are wanting a cookie but not a whole batch.
Karyne Golding
This cookie recipe is great, I loved that I could split into two medium sized cookies which my 2 year old, husband, and my father loved. It is delicious. The right amount of chocolate chips. It is so easy to make and takes no time at all.
