This single serve chocolate chip cookie recipe can make one or two cookies in less than thirty minutes. I've made it so easy to make this in a small bowl with just a spoon and a few staple ingredients. And, most of the recipes I had come across had you using a bit of an egg, so I made this egg free to make it even easier!

- Butter: I always use salted butter in my baking. I love the extra flavor it adds.
- Sugars: You will use brown, granulated and turbinado sugar for these. if you don't have turbinado sugar you can sub in granulated sugar.
- Milk: This will help add some binding and moisture to replace the egg. I used 2%, but whatever you have is great.
- Flour: I have tested this recipe with all-purpose and gluten free flour.
- Chocolate: My favorite combo is doing half chopped up milk chocolate bar and half semi-sweet chocolate chips.
- Flaked Salt: I can't enjoy a cookie without this!

Step by Step Instructions

- Step 1: In a small bowl mix together the melted butter and sugars. Add in vanilla and milk and mix again.

- Step 2: Mix in baking powder, baking soda, salt and flour and mix. Fold in chocolate.

- Step 3: Create one large cookie ball (or two medium) and place on the baking sheet. Chill the dough in the freezer for 5-10 minutes while the oven preheats.

- Step 4: Bake the cookie for 14-16 minutes, or until a light golden brown along the edges. Sprinkle with flaked salt as soon as it's done baking. If baking two medium cookies bake for 12-14 minutes.
Expert Baking Tips
- Be precise in your measuring! I would highly suggest using a scale for this recipe. Because it's such small amounts it's important that your measurements are spot on to ensure your cookie bakes up properly.
- If you don't have turbinado sugar sub in more granulated sugar. But the turbinado sugar is one of the reasons my salted chocolate chunk cookie recipe is so loved!
FAQ
Yes, you could bake 2-4 cookies if preferred. You'll just want ti decrease the baking time.
Yes, I have tested this with a 1:1 gluten free flour and it turned out great.

Storing & Freezing
If you wanted to make this recipe into two cookies you could either bake both cookies and save one in the freezer for later. OR you could bake one, and refrigerate or freeze the other cookie ball and bake whenever you wanted another one.

Ingredients
- 2 tablespoons (28 g) salted butter melted
- 2 tablespoons (30 g) packed brown sugar
- 1 tablespoons (12 g) granulated sugar
- 2 teaspoons (8 g) turbinado sugar
- 2 teaspoons (10 g) milk any kind
- ½ teaspoon (0.5 teaspoon) vanilla
- ⅛ teaspoon (0.13 teaspoon) baking powder
- ⅛ teaspoon (0.13 teaspoon) baking soda
- ⅛ teaspoon (0.13 teaspoon) salt
- ⅓ cup (50 g) all-purpose flour
- 3 tablespoons (42 g) chocolate I use a mix of chopped chocolate and chips
- flaked sea salt for sprinkling
Instructions
- Preheat the oven to 350 and line a small baking sheet with parchment paper
- In a small bowl mix together the melted butter and sugars. Add in vanilla and milk and mix again.
- Mix in baking powder, baking soda, salt and flour and mix. Fold in chocolate.

My husband and I were sick in bed with New Year’s colds when lo and behold this recipe popped up. Since the recipe only took a few minutes and ingredients to whip up, I had to try it for a little pick-me-up. These were delicious and just what we needed! The recipe turns out great with plant butter as well, but i am a little partial to the texture i got from regular butter instead.
