These triple chocolate cookies are a rich chocolate cookie with a white chocolate center and milk chocolate chunks. They are a copycat of the famous chocolate cookie from the Van Stapele bakery in Amsterdam, the perfect chocolate lovers cookie!

After a recent trip to Amsterdam where I waited in quite a long line to try the chocolate cookie from Van Stapele Bakery, I knew I needed to recreate this. The cookie has a rich chocolate flavor and a melty white chocolate center. While the bakery itself used a round white chocolate truffle, I found a chunk of white chocolate bar to work great too. And of course I added a bit of salt, cause that's what I do!

Ingredient Notes

- Butter: I always use salted butter in my recipes, but unsalted works fine too.
- Sugar: You will use both brown and granulated sugar in these cookies.
- Cocoa Powder: I love and suggest using dark cocoa powder in these cookies for a rich taste, but regular unsweetened cocoa powder works great too.
- Flour: Using a scale is best to measure ingredients, but if you don't have one lightly spoon flour into a measuring cup.
- White Chocolate: I tested these with a few different white chocolate bars and the Lindt melted the smoothest.
- Flaked Salt: When I tried this cookie for myself in Amsterdam the first thing I said to my husband was, "it's just missing the flaked salt". So while that makes these just a little different, that is always a favorite part for me!

Step by Step Instructions

- Step 1: In a large mixing bowl fitted with the paddle attachment, cream together butter and sugars on medium speed until light and fluffy. About 3-4 minutes. Add egg and vanilla and mix together.

- Step 2: In a medium bowl whisk together flour, cocoa powder, baking soda, salt and espresso powder. This will help so there are no clumps of cocoa powder.

- Step 3: Mix the dry ingredients into the wet ingredients until combined.

- Step 4: Fold in the milk chocolate chunks and the ¼ cup of white chocolate chunks.

- Step 5: Scoop dough using a 3 tablespoon cookie scoop. Push a small rectangle of a white chocolate bar into the middle of the cookie dough ball and roll into a ball again. Place 6 cookie balls per cookie sheet.

- Step 6: Bake for 10-12 minutes. Top with flaked salt and allow to cool.
Expert Baking Tips
- Make sure your butter isn't too soft or these cookies will spread too thin.
- These cookies are slightly different than the original Van Stapele cookies because they used a round white chocolate truffle in the middle and they don't add salt to theirs.
- I bought a 4 ounce Lindt white chocolate bar and chopped some of it (¼ cup) very small to mix into the dough, and then used one rectangle piece for the middle of each cookie.
- The espresso powder is to add a richness to the chocolate, you don't taste it in the cookie. But feel free to omit it if you don't have it.
- I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

FAQ
I love a rich, dark chocolate cocoa powder for this recipe. I generally use Ghirardelli Dutch process cocoa powder or Hershey's extra dark cocoa powder.
Yes, you could just chop all your chocolate and add it to the dough without adding the extra rectangle of chocolate into the center. Nothing needs to change for baking the cookies.
If your cookies spread to thin it's usually because your butter was too soft, and/or you didn't add quite enough flour.

Storing & Freezing
Triple chocolate cookies will remain fresh if stored in an airtight container at room temperature for 2-3 days. You can also prep the cookie dough in advance and store it in the fridge for about a week.
You can freeze your cookies in an airtight container for 2-3 months with them remaining fresh. You can also freeze the cookie dough balls if you would like to bake them one at a time, or as needed.

Ingredients
- ½ cup (113.5 g) salted butter
- ½ cup (110 g) brown sugar
- ¼ cups (50 g) granulated sugar
- 1 large egg room temp
- 2 teaspoon vanilla
- ½ teaspoon (0.5 teaspoon) baking soda
- ½ teaspoon (0.5 teaspoon) salt
- 1 teaspoon espresso powder can be skipped
- ⅓ cup (28.67 g) dark cocoa powder dutch processed is my favorite
- 1 cup (140 g) all-purpose flour
- ¼ cup (33 g) white chocolate bar chopped small
- ½ cup (87.5 g) milk chocolate bar chopped small
- 12 pieces white chocolate bar I used a lindt bar and used one rectangle per cookie (4 grams weight for each cookie)
- flaked salt for topping
Instructions
- Preheat oven to 350 F. Line 2 baking sheets with parchment paper.
