Triple Chocolate Cookies

These triple chocolate cookies are a rich chocolate cookie with a white chocolate center and milk chocolate chunks. They are a copycat of the famous chocolate cookie from the Van Stapele bakery in Amsterdam, the perfect chocolate lovers cookie!

Ingredients
 

  • ½ cup (113.5 g) salted butter
  • ½ cup (110 g) brown sugar
  • ¼ cups (50 g) granulated sugar
  • 1 large egg room temp
  • 2 teaspoon vanilla
  • ½ teaspoon (0.5 teaspoon) baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 1 teaspoon espresso powder can be skipped
  • cup (28.67 g) dark cocoa powder dutch processed is my favorite
  • 1 cup (140 g) all-purpose flour
  • ¼ cup (33 g) white chocolate bar chopped small
  • ½ cup (87.5 g) milk chocolate bar chopped small
  • 12 pieces white chocolate bar I used a lindt bar and used one rectangle per cookie (4 grams weight for each cookie)
  • flaked salt for topping

Instructions
 

  • Preheat oven to 350 F. Line 2 baking sheets with parchment paper.
  • In a large mixing bowl fitted with the paddle attachment, cream together butter and sugars on medium speed until light and fluffy. About 3-4 minutes. Add egg and vanilla and mix together.
  • In a medium bowl whisk together flour, cocoa powder, baking soda, salt and espresso powder.
  • Mix the dry ingredients into the wet ingredients until combined.
  • Fold in the milk chocolate chunks and the ¼ cup of white chocolate chunks.
  • Scoop dough using a 3 tablespoon cookie scoop. Push a small rectangle of a white chocolate bar into the middle of the cookie dough ball and roll into a ball again. Place 6 cookie balls per cookie sheet.
  • Bake for 10-12 minutes. Top with flaked salt and allow to cool.

Notes

Make sure your butter isn't too soft or these cookies will spread too thin.
I bought a 4 ounce Lindt white chocolate bar and chopped some of it (¼ cup) very small to mix into the dough, and then used one rectangle piece for the middle of each cookie.
I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.
