Peppermint Hot Chocolate Cookies

These peppermint hot chocolate cookies are a sweet chocolate cookie filled with chocolate chips, gooey marshmallows and little bits of peppermint candies. They are the perfect festive cookie!

Ingredients
 

  • cups (175 g) all-purpose flour
  • ¼ cup (21.5 g) cocoa powder
  • 1 teaspoon cornstarch
  • ½ teaspoon (0.5 teaspoon) baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • ½ cup (113.5 g) butter room temp
  • ¼ cups (50 g) granulated sugar
  • ½ cup (110 g) brown sugar
  • 1 large egg room temp
  • 1 teaspoon vanilla
  • ½ cup (90 g) chocolate chips
  • cup (33.33 g) mini marshmallows
  • ¼ cup (30 g) crushed peppermint candies

Instructions
 

  • In a medium bowl whisk together flour, cocoa powder, cornstarch, baking soda and salt. Set aside.
  • In a large mixing bowl fitted with the paddle attachment, cream together butter and sugars on medium speed until light and fluffy. About 3 minutes. Add the egg and vanilla and mix again.
  • Slowly add dry ingredients until just mixed together. Do not over mix dry ingredients. Fold in all chocolate chips, marshmallows and peppermint candies.
  • Scoop dough using a ¼ cup cookie scoop. Cover and chill dough for 2-24 hours.
  • Preheat oven to 375 F. Line 2 baking sheets with parchment paper.
  • Bake 6-8 cookies per sheet for 11-13 minutes, or until edges look cooked. Because of the marshmallows and candies the cookies will spread more in some areas, just grab a spatula or a spoon and push in any areas that spread too far right when they come out.

Notes

These cookies are also really good with white chocolate chips in them.
I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.
