- Butter: I always like to use salted butter, if using unsalted, just add an extra pinch of salt.
- Sugars: You will use both brown and granulated sugar in these bars.
- Eggs: This calls for 3 eggs, if you want to half the recipe use one whole egg and one egg yolk.
- Cornstarch: This will help to absorb the wetness in the bars and keep them chewy.
- Flour: I have made these with both all-purpose flour and a 1:1 gluten free flour and they've turned out great with both.
- Chocolate Chips: I usually use semi-sweet chips for these, but feel free to use whatever sounds good!
- Flaked Salt: I love maldon sea salt flakes for topping all my desserts!
Step by Step Instructions

- Step 1: In a medium bowl, stir together melted butter and both sugars until combined. Add eggs and vanilla and mix again.

- Step 2: Stir in baking soda, salt, cornstarch and flour. Then fold in chocolate chips.

- Step 3: Spread into prepared baking pan and smooth with a spatula to make even for baking.

- Step 4: Bake for 18-22 minutes or until light golden brown along the top and edges. Top with flaked salt. Allow to cool before cutting/serving.
Expert Baking Tips
- You want to make sure and not over bake these. They will continue to set up as they cool.
- Sub in any flavor of chips, add nuts or dried fruit. These can be done so many different ways to match whatever you're craving, or whatever you have in your pantry!
- I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

Yes, if you want to make a half batch you can bake them in a 9x13 pan. They should take about the same amount of time to bake. Find notes up above about how to half the eggs.
Yes, I have made these subbing in gluten free flour and they taste just as great!
Nuts would be great in these bars. I would suggest adding about 1 cup of pecans, walnuts or pistachios to this recipe.

Storing & Freezing
Sheet pan chocolate chip cookie bars can be stored in an airtight container or ziplock bag at room temperature for 2-3 days while remaining fresh.
These cookie bars freeze great. You can prep the whole pan, cover and freeze if you want to make a full batch ahead of time. You can also place leftover bars in an airtight container or ziplock bag and freeze squares for a quick afternoon treat.

Sheet Pan Chocolate Chip Cookie Bars
Ingredients
- 1¼ cups (283.75 g) salted butter melted and cooled
- 1½ cups (330 g) brown sugar
- ¾ cup (150 g) granulated sugar
- 3 large eggs room temperature
- 1 tablespoon vanilla
- 1½ teaspoons (1.5 teaspoons) baking soda
- 1 teaspoon salt
- 2 teaspoons cornstarch
- 3¼ cups (455 g) all-purpose flour
- 2¼ cups (405 g) chocolate chips
- flaked salt for topping
Instructions
- Preheat oven to 325 F. Spray a half sheet pan (18'x13') with cooking spray, you can also line with parchment paper, although it makes it harder to spread.
- In a medium bowl, stir together melted butter and both sugars until combined. Add eggs and vanilla and mix again.
- Stir in baking soda, salt, cornstarch and flour. Then fold in chocolate chips.

You're right that the dough is very thin when you spread it, but they bake up and spread. You can always do a slightly smaller pan if you prefer a thick cookie bar. These are meant to be thin like a cookie.
