S'mores Cookie Bars

These s'mores cookie bars are a soft and chewy graham cracker cookie, topped with toasted mini marshmallows and chocolate bars for the ultimate s'more experience from home!

S'MORES COOKIE BARS

Growing up in California s'mores were a staple dessert for me. I have always loved them and love everything that is s'mores flavored and recreated from cakes to bars to ice cream. And my graham cracker s'more cookies are one of our favorites at my house.

These cookies bars are the perfect crowd pleasing dessert that I love making for a bbq or somewhere that you want to be able to just cut them up and let people take as they please. But they also freeze so well if you just want to make them for yourself.

HOW TO MAKE S'MORES COOKIE BARS

  • Preheat oven to 350 F. Line a 9x13 baking pan with parchment paper, or spray with cooking spray and set aside.
  • Place butter and sugars together in a large mixing bowl fitted with a paddle attachment. Beat on medium-high for 3-4 minutes until light and fluffy.
  • Add eggs one at a time, mix until smooth on low speed, about 30 seconds each egg. Beat in the vanilla.
  • Add soda, salt, graham cracker crumbs and flour and mix on low until incorporated.
  • Press cookie dough into the bottom of the 9x13 baking pan.

  • Bake for about 16-18 minutes. The middle of the cookie base should still look slightly doughy and glossy, but the edges should look done.
  • Remove from the oven and top with marshmallows. Return to the oven for about 3-4 minutes, until they are all puffed. You can throw under the broiler if you want, or use a kitchen torch after to get some parts more browned.

  • Top the cooked and warm marshmallows with hershey squares, or even chocolate chips.
  • Allow to cool before cutting into them.

HOW TO STORE THE BARS

These bars can be stored in an airtight container at room temperature or in the fridge or freezer. I absolutely love these bars cold, but they don't need to be chilled.

WHAT KIND OF CHOCOLATE TO USE

I usually use hershey bars for these for the typical "s'mores" look, but of course any chocolate would work, even dark chocolate if that is what you prefer. Sprinkling chocolate chips along the top would also work great, although they may not melt the same.

Notes

I have always just put chocolate bars on top, but I think chocolate chips would be great too. It all turns into melty chocolate anyway.
These bars store great, and I love to eat them out of the freezer because they stay somewhat chewy!
I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

    SOO DELICIOUS! Everyone loved them!! My husband doesn't have much of a sweet tooth, but he could not stop eating these! I thought they were alright the first try, but after trying them refrigerated... WAY BETTER! Highly recommend

        These gave become my go-to to bring for gatherings! My teens especially love them and so do their teammates! Definitely a crowd pleaser and I love that I can make them the day before and store in the refrigerator until needed the next day! Thanks for a great recipe!!

    These are so delicious and so easy, though mine never turn out as beautiful as yours! It doesn’t matter though because they go so fast! I love the graham cracker cookie base, I could eat a whole bowl of it raw. I especially loved these in the summer at a bonfire for my kids. Just as delicious- way less hassle and mess!     I love anything s’mores and I usually make a s’mores cupcake but these are so good!!! I love how much marshmallow the recipe called for as it covered the full pan. Super gooey and just the perfect treat. My kids love them.

    These are such a hit for all ages!! I am not a big marshmallow person but even I couldn’t resist this deliciousness. So simple to make and gives you major street cred amongst the teenagers. Ha! I use Cadbury chocolate bars on top because those are my fave.

    These are incredible. I made these for an office party and had to make a second batch because my family ate too many of the original one ha! The texture is delicious and the instructions were very clear and helpful.

    Another win by Brooke!! These came out amazing! I only had regular sized marshmallows, so I cut them in half and it took 1-2 minutes extra to bake to get them lightly browned on top. But still came out incredible!!
