Rice Krispie Cookies have a great added crunch from both the rice krispie cereal and nestle crunch bar. They're a chewy cookie that can be made in less than 30 minutes, and the perfect mix of a rice krispie treat and a chocolate chip cookie.

Ingredient Notes

- Butter: I always prefer to use salted butter, but either is fine.
- Turbinado Sugar: This sugar will give a little extra texture to your cookies, if you don't have it you can sub in granulated sugar.
- Oats: You will blend/pulse your oats just a bit to get smaller bits of oats.
- Rice Krispies: These add such a fun texture to the cookies.
- Nestle Crunch Bar: I used one large size bar. You can sub regular milk chocolate bar or more chips if you need.
- Flaked Salt: I love adding salt flakes to the top of my cookies to help balance out the sweetness.

Step by Step Instructions

- Step 1: Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, 3 to 4 minutes. Add in egg and vanilla and mix together until combined.

- Step 2: Place oats in a blender or food processor and pulse a few times so you have some oat flour and some thicker pieces of oats. (Can also chop with a knife if needed)

- Step 3: Add in baking soda, salt, flour, oats and mix until combined.

- Step 4: Fold in rice krispies, nestle crunch bar and chocolate chips.

- Step 5: Scoop the dough into large balls, I like to use the ¼ cup cookie or ice cream scoop. Top cookie dough with a few more pieces of chocolate and some flaked salt.

- Step 6: Bake the cookies for 11-13 minutes. Sprinkle with a little extra salt if desired.
Expert Baking Tips
- If your cookies don't come out in a perfect circle, I like to take a spatula and circle the rim of the cookie to bring in any spots that have spread a little too far.
- The butter and egg should not be completely chilled from the fridge, but should also not be soft. I try to let them sit out for about 15-30 minutes before I begin my cookie making!
- I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don't have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

FAQ
Yes, if skipping the oats you will need to add about ½ cup extra flour to the dough.
I love using parchment paper because it helps to keep the cookies from spreading too thin, helps them from sticking to the pan and also keeps the cookie sheet clean.
You would need to make sure and find gluten free rice krispies and either a gluten free chocolate bar, or just add more chocolate chips instead.

Storing & Freezing
These rice krispie cookies will remain fresh if stored in an airtight container at room temperature for 2-3 days. You can also prep the cookie dough in advance and store it in the fridge for about a week.
You can freeze your cookies in an airtight container for 2-3 months with them remaining fresh. You can also freeze the cookie dough balls if you would like to bake them one at a time. If baking the cookies from frozen I would bake them at 325 instead of 350.

Ingredients
- ½ cup (113.5 g) butter
- ½ cups (110 g) packed brown sugar
- ¼ cup (50 g) granulated sugar
- 2 tablespoons turbinado sugar
- 1 large egg
- 1 teaspoon vanilla

Instructions
