Ingredient Notes
Full ingredient measurements and instructions can be found in the recipe card below.
- Butter: I always use salted butter in my recipes, but unsalted works fine too.
- Sugar: You will use both brown and granulated sugar in these cookies.
- Cocoa Powder: I love and suggest using dark cocoa powder in these cookies for a rich taste, but regular unsweetened cocoa powder works great too.
- Flour: Using a scale is best to measure ingredients, but if you don't have one, lightly spoon flour into a measuring cup.
- Marshmallows: Make sure you use the large ones.

Step by Step Instructions

- Step 1: In a large mixing bowl fitted with the paddle attachment, cream together butter and sugars on medium speed until light and fluffy. About 3-4 minutes. Add egg and vanilla and mix together.

- Step 2: In a medium bowl whisk together flour, cocoa powder, baking soda, salt and cinnamon. Mix the dry ingredients into the wet ingredients until combined. Fold in the chocolate chips. Scoop dough using a 3 tablespoon cookie scoop, cover and chill in the fridge for 30 minutes.

- Step 3: Take each dough ball and flatten in your hand. Place a single marshmallow long ways on top of the dough and wrap the dough around it. There will be a small bit of the marshmallow peeping out the top.

- Step 4: Cover and chill the dough again for 1-2 hours.

- Step 5: Roll the cookie dough in the graham cracker crumbs.

- Step 6: Bake for 10-13 minutes. Top with a piece of chocolate and an extra sprinkle of graham cracker crumbs.
Expert Baking Tips
- Chilling the dough will help make it more manageable, but it will still get your hands a bit dirty.
- If the dough is sticking too much, wet your hands/fingers a bit.
- If your cookies don't come out in a perfect circle you can run a small spatula around them while they're hot and help to create a better shape.
- I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

FAQ
If you wanted to use mini marshmallows I would add ¾ cup to the dough with the chocolate chips and then chill and bake.
I love a rich, dark chocolate cocoa powder for this recipe. I generally use Ghirardelli Dutch process cocoa powder or Hershey's extra dark cocoa powder.
Yes, just make sure that you sub in a GF flour and use GF graham cracker crumbs.

Storing & Freezing
Double chocolate s'more cookies will remain fresh if stored in an airtight container at room temperature for 2-3 days. You can also prep the cookie dough in advance and store it in the fridge for about a week.
You can freeze your cookies in an airtight container for 2-3 months with them remaining fresh. You can also freeze the cookie dough balls if you would like to bake them one at a time, or as needed.

Ingredients
- ½ cup (113.5 g) salted butter
- ½ cup (110 g) brown sugar
- ¼ cups (50 g) granulated sugar
- 1 large egg room temp
- 2 teaspoon vanilla
- ½ teaspoon (0.5 teaspoon) baking soda
- ½ teaspoon (0.5 teaspoon) salt
- ¼ teaspoon (0.25 teaspoon) cinnamon
- ⅓ cup (30 g) dark cocoa powder Ghirardelli dutch process is my favorite
- 1 cup (140 g) all-purpose flour
- ½ cup (90 g) chocolate chips I used semi-sweet
- 2 graham crackers crushed into crumbs
- 12 large marshmallows
- 12 chocolate bar pieces for topping
Instructions
- In a large mixing bowl fitted with the paddle attachment, cream together butter and sugars on medium speed until light and fluffy. About 3-4 minutes. Add egg and vanilla and mix together.
- In a medium bowl whisk together flour, cocoa powder, baking soda, salt and cinnamon. Mix the dry ingredients into the wet ingredients until combined. Fold in the chocolate chips.Scoop dough using a 3 tablespoon cookie scoop, cover and chill in the fridge for 30 minutes.

- Preheat oven to 350 F. Line 2 baking sheets with parchment paper.
