    Reese's Pieces Peanut Butter Cookies

    These reese's pieces peanut butter cookies have crispy edges, a chewy center and are filled with reese's pieces and peanut butter chips. They're the ultimate peanut butter lovers dream!

    Reese's pieces peanut butter cookies are for anyone that loves peanut butter. They are literally loaded with all things peanut butter and nothing else. The texture is slightly crispy edges with the perfect chewy and soft center.

    Why You Will Love These

    ONE BOWL: You only need one small mixing bowl and a spoon to make these cookies. 

    QUICK & EASY: These cookies are so simple to make and can be made in about twenty minutes.

    LOADED WITH PEANUT BUTTER: These cookie have peanut butter, reese's pieces and peanut butter chips in them

    Ingredient Notes

    • Butter: I always used salted butter.
    • Peanut Butter: You need to use one such as jiffy or skippy, where the oil doesn't separate. I also use creamy, but crunchy would work too.
    • Flour: Make sure if you aren't using a scale you lightly scoop flour into your measuring cup so you don't over pack it.
    • Reese's Pieces: You can use regular size or mini ones.
    • Peanut Butter Chips: I use the Reese's brand from the grocery store. If you don't have them or can't find them you can sub with chocolate chips or extra reese's pieces.

    Step By Step Instructions

    Step 1: Place the butter, peanut butter and sugars together in a stand mixer fitted with a paddle attachment. Beat about 2-3 minutes until light and fluffy. Add egg and vanilla and mix until smooth.

    Step 2: Slowly mix in dry ingredients, being careful not to over mix. I usually stop when I still have some flour remnants around the bowl. Fold in reese's pieces and peanut butter chips.

    Step 3: Using a large cookie scoop, (I use a 3 tbsp) scoop dough into balls. Place 8 balls per sheet and sprinkle with a little flaked salt. You can also top with a few more reese's pieces for color on top if you'd like.

    Step 4: Bake for 10-12 minutes, or until edges are slightly golden brown. Let cool on the cookie sheet for 5-10 minutes to help the center finish setting.

    Expert Baking Tips

    These cookies will not have the same results if you use all natural peanut butter. Because of the oil separating this usually ends up creating a runnier and flatter cookie.

    You can easily skip peanut butter chips and add extra reese's pieces or chocolate chips.

    If your cookies don't come out in a perfect circle simply run a small spatula along the outside while they're hot and push in any parts that are't quite perfect.

    FAQ

    What will happen if I use natural peanut butter instead of regular?

    Natural peanut butter tends to be more oily and therefore the cookies will usually spread out more and become crisper.

    Can I use crunchy peanut butter instead of creamy?

    Yes! Crunchy and creamy both work great, it just depends on if you want little bits of nuts in the cookies or not.

    How do I know if my cookies are done baking?

    The edges of the cookies will start to turn a golden brown and you'll start to see some crackling in the tops of the cookies. If there is a slight dome in the middle then they are not quite done baking.

    Storing and Freezing

    Reese's pieces peanut butter cookies will remain fresh in an air tight container at room temperature for 2-3 days. Storing in the fridge is not suggested. It will dry them out.

    Freezing

    You can freeze your cookies in an airtight container for 2-3 months with them remaining fresh. You can also freeze the cookie dough balls if you would like to bake them one at a time. Just allow them to sit out and thaw a bit while the oven is preheating.

    Ingredients
     
     

    • ½ cup butter room temperature
    • ½ cup creamy peanut butter not natural
    • ¾ cups brown sugar
    • ¼ cup granulated sugar
    • 1 large egg room temperature
    • 1 teaspoon vanilla
    • ½ teaspoon salt
    • ¾ teaspoon baking soda
    • 1¼ cups all-purpose flour
    • ¾ cup reese's pieces candies
    • ¼ cup peanut butter chips
    • flaked salt for sprinkling on top

    Instructions

    I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.
