These reese's pieces peanut butter cookies have crispy edges, a chewy center and filled with reese's pieces and peanut butter chips. They're the ultimate peanut butter lovers dream!
Preheat oven to 375 F. Line two cookie sheets with parchment paper.
Place the butter, peanut butter and sugars together in a stand mixer fitted with a paddle attachment. Beat about 2-3 minutes until light and fluffy.
Add egg and vanilla and mix until smooth.
Slowly mix in dry ingredients, being careful not to over mix. I usually stop when I still have some flour remnants around the bowl. Fold in reese's pieces and peanut butter chips.
Using a large cookie scoop, (I use a 3 tbsp) scoop dough into balls. Place 8 balls per sheet and sprinkle with a little flaked salt. You can also top with a few more reese's pieces for color on top if you'd like.
Bake for 10-12 minutes, or until edges are slightly golden brown. Let cool on the cookie sheet for 5-10 minutes to help the center finish setting.
Notes
You can easily skip peanut butter chips and add extra reese's pieces or chocolate chips.I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.
