Cherry Chocolate Chip Blondies

These cherry chocolate chip blondies are the perfect summer time cherry dessert loaded with dark chocolate and fresh cherries in a sweet cookie bar.

WHAT IS A CHERRY CHOCOLATE CHIP BLONDIE

A blondie is a mesh between a cookie bar and a brownie, or even referred to as a blonde brownie sometimes. Usually a little chewier in texture than an actual cookie, and thicker because there isn't room for spreading. They are done with mostly or all brown sugar to achieve a richer and chewier texture, and usually filled with some sort of mix ins. Insert... cherries and chocolate chips here. Because cherries are just starting to show up at the stores and I love them mixed with chocolate, I decided to mesh the flavors into a bar for the perfect treat!

WHAT INGREDIENTS ARE NEEDED

  • Butter
  • Brown Sugar
  • Vanilla
  • Egg
  • Flour
  • Baking Powder
  • Salt
  • Dark Chocolate Chips
  • Fresh Sweet Cherries

HOW TO MAKE CHERRY CHOCOLATE CHIP BLONDIES

  1. Preheat oven to 350 F, and line a 8x8 baking pan with cooking spray and parchment paper.
  2. In a medium bowl, whisk together butter and brown sugar until combined.
  3. Add egg and vanilla and mix until combined.
  4. Stir in flour, baking powder and salt. Then fold in chocolate chips and cherries.
  5. Pour into prepared baking pan and smooth with a spatula to make even for baking.
  6. Bake for 25-30 minutes or until golden brown along the top, and no jiggles in the center. Allow to cool before serving.

CAN I USE FROZEN CHERRIES?

Yes, you can substitute frozen cherries for fresh ones. Make sure that you let them come to room temperature first, and that you squeeze or blot any excess juices as this will affect the baking of the blondies. It might also turn them a slightly pink color if there is too much juice.

DO I NEED TO USE DARK CHOCOLATE CHIPS?

You are welcome to use any kind of chocolate, or even leave it out if you want. You could even add some nuts in there for added texture!

STORING THE BLONDIES

It is best to store these cherry chocolate chip blondies in the fridge because the cherries will begin to soften over time once cooked. You can also store them in the freezer for a few months.

Ingredients
 
 

  • ½ cup butter melted and cooled
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 large egg room temp
  • 1¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup dark chocolate chips
  • 1 cup cherries (about 18 cherries) pitted

Instructions
 

  • Preheat oven to 350 F, and line a 8x8 baking pan with cooking spray and parchment paper.
  • In a medium bowl, whisk together butter and brown sugar until combined.
  • Add egg and vanilla and mix until combined.
  • Stir in flour, baking powder and salt. Then fold in chocolate chips and cherries.
  • Pour into prepared baking pan and smooth with a spatula to make even for baking.
  • Bake for 25-30 minutes or until golden brown all along the top, and edges pull away from the pan. Allow to cool before serving.

Notes

Feel free to use milk or white chocolate chips in these bars if you prefer. Nuts would also make a great addition.
I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

    Yum! What type nuts do you think would go best with this?

      I would probably suggest either pistachios or walnuts, but almonds and pecans would probably be good too!

    Hi Brooke! Mine came out more “cake like” than blondies I have made in the past. I measured but am thinking maybe I used to much flour? I’d love to try them again at the cherry/chocolate combo sounds so good. Any thoughts on what I may have done wrong? Thanks!!

      That would be my guess, if you have a scale weighing out the flour is always best. If not, try and fluff it before using a measuring cup, or using a spoon to add it to the cup so it doesn't get too packed. Hope that helps!
