- Peach: I like to dice my peach into small chunks so it cooks quicker and is easier to bite. One large peach was the perfect amount for me to fill my ramekins.
- Sugar: I used granulated sugar throughout, but brown sugar would work also.
- Flour: I used all-purpose, but wheat or gluten free would work.
- Butter: Once melted you will add some to both ramekins and the rest to the crumb topping.

Step by Step Instructions

- Step 1: Preheat your oven to 350 and pour ½ tablespoon of the melted butter into the bottom of both ramekins, swirling to coat the whole bottom.

- Step 2: In a small bowl mix together diced peaches, sugar and cinnamon. Divide evenly between the two baking dishes.

- Step 3: Using the same bowl mix together flour, sugar, baking powder and salt. Add in the remaining 2 tablespoons of melted butter and vanilla and mix together until combined. Sprinkle the topping over the peaches. Sprinkle with turbinado sugar if you want a little extra crunch on top.

- Step 4: Bake for 30-35 minutes, or until lightly golden brown along the top and bubbling around the edges. Allow to cool slightly before serving.
Expert Baking Tips
- I don't peel my peach, but you can if you prefer.
- Adding a few fresh berries to each ramekin would also be delicious!
- You can add 2 tablespoon of oats or nuts to the crumb topping if you'd like.
- Top with a scoop of vanilla ice cream or a dollop of whipped cream.

Storing & Freezing
This individual mini peach cobbler can be stored in the fridge once cooled and covered with saran wrap for 3-4 days.
You can freeze these if you want to bake two, but only eat one and save the other. Just cover and freeze for up to 2 months. Allow to come to room temperature before eating.
