Individual Mini Peach Cobbler

This individual mini peach cobbler makes two little ramekins filled with spiced peaches topped with a sweet buttery topping. We love that it only needs one peach and thirty minutes for a quick little dessert for two!

Ingredients
 

  • 3 tablespoons salted butter melted
  • 1 large peach diced
  • 2 tablespoons sugar
  • ¼ teaspoon (0.25 teaspoon) cinnamon
  • cup (41.67 g) all-purpose flour
  • 3 tablespoons sugar
  • ½ teaspoon (0.5 teaspoon) baking powder
  • pinch of salt
  • ½ teaspoon (0.5 teaspoon) vanilla
  • turbinado sugar for sprinkling

Instructions
 

  • Preheat your oven to 350 and pour ½ tablespoon of the melted butter into the bottom of both ramekins (mine are 7 ounce size), swirling to coat the whole bottom.
  • In a small bowl mix together diced peaches, sugar and cinnamon. Divide evenly between the two baking dishes.
  • Using the same bowl mix together flour, sugar, baking powder and salt. Add in the remaining 2 tablespoons of melted butter and vanilla and mix together until combined. Sprinkle the topping over the peaches. Sprinkle with turbinado sugar if you want a little extra crunch on top.
  • Bake for 30-35 minutes, or until lightly golden brown along the top and bubbling around the edges. Allow to cool slightly before serving.

Notes

I don't bother peeling the peach for this, but you can if you want.
You can add 2 tablespoon of oats or nuts to the crumb topping if you'd like.
