This individual mini peach cobbler makes two little ramekins filled with spiced peaches topped with a sweet buttery topping. We love that it only needs one peach and thirty minutes for a quick little dessert for two!
Preheat your oven to 350 and pour ½ tablespoon of the melted butter into the bottom of both ramekins (mine are 7 ounce size), swirling to coat the whole bottom.
In a small bowl mix together diced peaches, sugar and cinnamon. Divide evenly between the two baking dishes.
Using the same bowl mix together flour, sugar, baking powder and salt. Add in the remaining 2 tablespoons of melted butter and vanilla and mix together until combined. Sprinkle the topping over the peaches. Sprinkle with turbinado sugar if you want a little extra crunch on top.
Bake for 30-35 minutes, or until lightly golden brown along the top and bubbling around the edges. Allow to cool slightly before serving.

Notes
I don't bother peeling the peach for this, but you can if you want. You can add 2 tablespoon of oats or nuts to the crumb topping if you'd like.
