Chocolate Oreo Ice Cream Cake

This chocolate oreo ice cream cake starts with a layer of chocolate cake, then hot fudge and oreos, next oreo ice cream and then covered with a whipped topping and some more hot fudge and oreos. Basically a dream cake for any chocolate and oreo lovers.

CHOCOLATE OREO ICE CREAM CAKE

We are serious ice cream lovers in our house. And almost every time I ask a particular son of mine what cake he wants for his birthday cake he requests an ice cream cake, so I played around and made this cake and we all love it so much. It's one of the most requested cakes now. And the best part is it's so easy to change up the flavors of ice cream, cake and oreos depending on what you're in the mood for.

HOW TO MAKE AN ICE CREAM CAKE

You're going to start by making a single layer of chocolate cake for the bottom of the cake.

  • Preheat the oven to 350 F. Spray a 8-inch round cake pans with non-stick cooking spray, and then line the bottom of the pan with parchment.
  • In a large bowl, sift or stir together flour, sugars, cocoa powder, baking soda, baking powder, and salt.
  • In a mixing bowl, beat oil, egg, buttermilk, and vanilla together until completely mixed. About 1 minute.
  • Slowly add dry ingredients into wet ingredients while mixing.
  • Pour in hot water and mix together another minute. It's ok if the batter seems extra liquidy.
  • Pour batter into the pan. Bake for about 20 minutes. When toothpick placed in the center of the cakes comes out clean, you know it is done.

Once your cake layer is done you are going to want to freeze a layer of ice cream for another layer.

  • Let the ice cream thaw on the counter for about 10 minutes to soften enough to work with. Line a 8 inch baking pan with saran wrap and place all the ice cream inside, making sure to push it in and compact it in there. Cover with more saran wrap and allow to completely freeze again.

HOW TO ASSEMBLE THE CAKE

You are going to want to crush up your oreo's in a bowl and add some hot fudge to it to place in-between the cake and the ice cream layers. After you place the oreo/hot fudge mixture across the top as pictures below, you will then place the frozen layer of ice cream on top of that.

Once you have the cake, oreo/hot fudge and ice cream layers done it is time for the whipped topping.

Drizzle more hot fudge and sprinkle with more crushed oreo's on top.

FREEZE again for a few hours. I know, waiting can be hard.

DOES THE CAKE NEED TO SIT OUT BEFORE EATING?

I would suggest letting the cake sit out for about 10 minutes before you are ready to serve unless it is a very hot day, in that case you can probably serve right away. And make sure to put back any leftovers in the freezer as soon as possible to keep the ice cream from melting and refreezing.

HOW TO SAVE LEFTOVERS

Once you have cut and served the cake, you can cut your leftovers into individual pieces and then wrap with saran wrap and place in a ziplock bag. This allows you to store them without having a large chunk of cake inside the freezer, as I know that can be hard to find room for.

Ingredients
 
 

  • ⅔ cup all-purpose flour
  • ⅓ cup brown sugar
  • ⅓ cup granulated sugar
  • ¼ cup cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2½ tablespoon oil
  • 1 large egg room temperature
  • ⅓ cup buttermilk room temperature
  • 1 teaspoon vanilla extract
  • ⅓ cup hot water
  • ¾ cup hot fudge
  • 8-10 oreos
  • 8 oz whipped topping such as cool whip
  • ½ gallon carton of ice cream I used oreo

Instructions
 

To make the cake:

  • Preheat the oven to 350 F. Spray a 8-inch round cake pans with non-stick cooking spray, and then line the bottom of the pan with parchment.

  • Let the cake completely cool before taking out of the pan.

For the ice cream layer:

  • Let the ice cream thaw on the counter for about 10 minutes to soften enough to work with. Line a 8 inch baking pan with saran wrap and place all the ice cream inside, making sure to push it in and compact it in there. Cover with more saran wrap and allow to completely freeze again.

For cake assembly:

  • Place the layer of cake on a serving plate or paper plate, something that will be able to go back into the freezer. Crush the oreos in a ziplock bag and take the ¾ cup hot fudge and mix the two together. Place the hot fudge and oreo mixture on top of the cake layer. Then unwrap the layer of ice cream and place on top of the oreo mixture. Cover the whole thing with your tub of whipped topping, and then drizzle any extra oreos or hot fudge on top if you want. Place the whole cake back into the freezer and allow to freeze completely again. I like to let it sit in there for at least 4 hours to make sure it is fully frozen.
  • Take out of the freezer just a few minutes before ready to serve, unless it is a hot day, then serve immediately.

Notes

Cakes will have the best results if made with room temperature ingredients. I like to pull my egg and buttermilk out of the fridge an hour or two before I start baking. 
This can be done with any kind of ice cream. and any flavor of oreo you want. We have made so many combinations, but all oreo is my kids favorite!
I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

        Made this for my son’s birthday and my only complaint it that it was gone before I got to try any! All any of the kids, and my husband, could talk about was how good this cake was! I can’t wait to try more of your recipes.
