Chocolate Dipped Rice Krispie Treats

Chocolate dipped rice krispie treats are sweet, chewy and a slightly upgraded version of the original classic. Dip then in semi-sweet, milk or white chocolate, and watch as they disappear so quick!

I have always loved the simple classic rice krispie treats, but making them chocolate dipped rice krispie treats makes them extra delicious. They're quick and easy to make, and always loved by both kids and adults.

WHY YOU WILL LOVE THESE

EASY TO MAKE- Rice krispie treats are one of the easiest treats to make, no oven or prepping required.

CHEWY & CRUNCHY- I love that these are the perfect combo of texture with the chewy marshmallows and crunchy rice krispies.

CHOCOLATE- Who doesn't love having a pretty coating of chocolate on their treats?! And you can use whichever chocolate you prefer.

INGREDIENT NOTES

  • Mini Marshmallows- I really think the mini melt better and keep a better consistency, but if all you have is large marshmallows they'll work too.
  • Flaked Sea Salt- I love the balance the little bit of salt adds to the sweetness in these.
  • Chocolate- I prefer to use a high quality chocolate bar, but chocolate chips are great too. Use whatever you love the most whether that's dark, semi-sweet or milk.
  • Coconut Oil- This coconut oil is to help the chocolate melt more smoothly and then to solidify better once dipped.

STEP BY STEP INSTRUCTIONS

STEP ONE: Spray an 9x13 pan with cooking spray and set aside. You can also line the pan with parchment paper.

STEP TWO: Start by melting the butter. You'll take 4 tbsp. of butter and melt in a medium saucepan over medium/low heat.

STEP THREE: Turn heat to low and add marshmallows and salt to pot and stir until marshmallows are completely melted.

STEP FOUR: Remove from heat and add rice krispies and stir until completely coated.

STEP FIVE: Pour mixture into prepared pan. Press down firmly to create and even layer and compact rice krispie treats. Allow to cool/set completely before dipping in chocolate.

STEP SIX: Melt chopped chocolate and coconut oil in a microwave safe bowl. I usually like to stir after the first 30 seconds, and then every 15 seconds after until completely melted.

STEP SEVEN: Cut rice krispie treats into 12 equal rectangles. Dip the corner of each rice krispie treat into melted chocolate and then set on parchment paper to set. If your house is too warm you may need to stick them in the fridge for about 30 minutes to allow the chocolate to set up.

EXPERT BAKING TIPS

I like to use a 9x13 pan for these so that they are a thinner rice krispie treat which makes them easier to eat when dipped, but feel free to make them thicker if you prefer.

I found that putting the rice krispie treats in the fridge right after I dipped them in the chocolate helped the chocolate solidify quicker. It should only take about 30 minutes.

Make sure your marshmallows are fresh. The hard, stale marshmallows will affect how they melt and how gooey they are once done.

FAQ

Why is coconut oil used with melting chocolate?

The coconut oil helps the chocolate to melt to a smoother consistency, and also helps it to solidify quicker. Almost the way magic shell does.

Why did my rice krispie treats turn out hard?

Melting the butter and marshmallows at a high heat is usually the reason for this. Make sure you keep it on low-medium heat.

Do I need to let my rice krispie treats cool before cutting and dipping in the chocolate?

Yes, allowing them to cool will help them hold their shape better. This will also help them stay more stiff when dipping in the chocolate.

STORING

Chocolate dipped rice krispie treats will remain fresh fr 4-5 days if kept in an air tight container. Depending on the size, just stack the rice krispie treats with parchment or wax paper in-between each row.

You can use any kind of chocolate that you prefer, and even use chocolate chips if that's what you have on hand. Chocolate bars melt easier, but either will work.
These will remain fresh for 3-4 days if kept in an airtight container.
