Ingredient Notes

- Butter: I always use salted butter for my baking, but unsalted is great too.
- Sugars: You will use both granulated and brown sugar for these cookies.
- Egg: You will only need the egg yolk for these, but if you want to double the recipe you can use 1 whole egg instead of 2 yolks.
- Oats: You will pulse or chop the oats for these cookies to give them a more even oat texture.
- Flour: Both all-purpose and gluten free flour work for these cookies.

Step by Step Instructions

- Step 1: Place the butter and sugars in a medium bowl, or a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, 2-3 minutes. Add in egg yolk and vanilla and mix together until combined.

- Step 2: Place oats in a blender or food processor and pulse a few times so you have some oat flour and some thicker pieces of oats. (Can also chop with a knife if needed)

- Step 3: Add in baking soda, salt, flour, oats and mix until combined.

- Step 4: Scoop the dough into balls, I used a 3 tablespoon scoop to get 5 cookies.

- Step 5: Bake the cookies for 10-12 minutes. Allow to cool.

- Step 6: Mix together powdered sugar, milk and vanilla until smooth. Brush or drizzle over the tops of the cookies. Enjoy!
Expert Baking Tips
- Pulsing the oats helps to create a chunky oat flour instead of just whole oats.
- If your cookies don't come out in a perfect circle, I like to take a spatula and circle the rim of the cookie to bring in any spots that have spread a little too far.
- I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don't have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

Yes, you could add ½ cup of chocolate chips, or I have a small batch oatmeal chocolate chip cookie you could try.
Your butter may have been too soft, or you might not have added quite enough flour.

Storing & Freezing
Small batch oatmeal cookies will remain fresh if stored in an airtight container at room temperature for 2-3 days, or in the freezer for 3 months. You can also prep the cookie dough in advance and store it in the fridge for up to a week.

- 4 tablespoons salted butter
- ¼ cup (55 g) brown sugar
- 2 tablespoons (24 g) granulated sugar
- 1 large egg yolk room temperature
- 1 teaspoon vanilla
- ¼ teaspoon (0.25 teaspoon) baking soda
- ¼ teaspoon (0.25 teaspoon) salt
- ¼ teaspoon (0.25 teaspoon) cinnamon
- ⅛ teaspoon (0.13 teaspoon) nutmeg
- ½ cup (52 g) old fashioned oats pulsed in the blender
- ½ cup (70 g) all-purpose flour
Glaze
- ¼ cup (30 g) powdered sugar
- ½ tablespoon (0.5 tablespoon) milk
- ½ teaspoon (0.5 teaspoon) vanilla paste or extract
Instructions
- Preheat the oven to 350. Line a baking sheets with parchment paper and set aside.

Okay I'm obsessed! Just like her coconut lemon muffins and the small batch brownies, these DELIVER. Rarely do I stick with one blogger, preferring to try others' recipes but salted sweets is one I come back to time and time again. This was my first time making these small batch oatmeal cookies but it most def will not be the last. Just a note, the ingredients list has cinnamon and nutmeg listed but it's not in the directions to add so make sure you add them with all the other dry ingredients; the flavors do come out and def add to the deliciousness of this cookie! It's actually in the heat of summer as I made these and it did give me some cozy, fall vibes so I can definitely see this being soo nice to have in the colder months (though nothing wrong at all with a cozy cookie any time of year!) Anyway, 10/10 recommend 🤩
