This old-fashioned oatmeal cake is a buttery cake loaded with oats and cinnamon and topped with a brown sugar and coconut topping, that gives it some extra texture and sweetness. It's warm and comforting like an oatmeal cookie, and pairs so perfectly with a scoop of vanilla ice cream or a dollop of whip cream.
OLD-FASHIONED OATMEAL CAKE
My Mom always made this cake in the fall, and I would look forward to it year after year. I tend to love anything with cinnamon and oats because it gives it such a wonderful flavor and texture, but eating it warm with a scoop of ice cream makes even better.
It's the perfect cake to serve on a cold night when you want to sit and enjoy a little something sweet while watching a movie or having the fire going.
INGREDIENTS NEEDED
- Old-fashioned Oats
- Water
- Butter
- Brown Sugar
- Granulated Sugar
- Egg
- Vanilla
- Baking Soda
- Salt
- Cinnamon
- Flour
- Whipping Cream
- Shredded Coconut
HOW TO MAKE OLD-FASHIONED OATMEAL CAKE
- Preheat oven to 350 F. Spray a 8x8 baking pan with cooking spray and line with parchment paper.
- Place oats in a bowl and pour boiling water over it. Set aside and allow to seap up the water and cool.
- In a medium size bowl cream together butter and sugars until light and fluffy. Beat in egg and vanilla.
- Add baking soda, salt and cinnamon and mix til combined.
- Add cooled oats and any leftover liquid. Stir in flour.
- Pour into greased and or lined pan. Bake for 25 minutes, or until a toothpick comes out clean.
- Mix topping ingredients together and spread over hot cake. Return to the oven and bake for another 3-5 minutes. Make sure the coconut doesn't burn.
WHAT IF I DON'T LIKE COCONUT?
If you don't love coconut you could easily frost this cake with any kind of frosting you prefer. Cream cheese would be fabulous!
CAN I ADD CHOCOLATE CHIPS?
YES! ½ cup of chocolate chips would be a great addition to the inside or on top of this cake.
CAN THIS CAKE BE DOUBLED TO SERVE FOR PEOPLE?
You can double this recipe and bake in a 9x13 baking pan instead. I would just set the timer for 30 minutes instead and watch it.
You could also double the recipe and still bake in a 8x8 baking pan for a taller slice of cake.
