CHAI BLONDIES WITH CINNAMON CHIPS
I have always been really into blondies. They seem to be such a quick and easy bar to make, and then all the brown sugar and butter makes them so chewy and moist. And my favorite part is just like a basic cookie dough the add in's and additions make it such a versatile place to start. But with Fall nearing I wanted it to include some spices and cinnamon chips.
WHAT YOU NEED TO MAKE THESE CHAI BLONDIES WITH CINNAMON CHIPS
- Butter
- Brown Sugar
- Egg
- Vanilla
- Flour
- Baking Powder
- Salt
- Cinnamon Chips
- Sugar
- Cinnamon
- Ginger
- Cardamom
- Cloves
- Nutmeg
STEP BY STEP INSTRUCTIONS
- Preheat oven to 350 F. Line and spray and 8×8 baking dish with parchement paper.
- In a medium mixing bowl beat butter and brown sugar on medium speed until combined. Add egg and vanilla and mix again.
- Add flour, baking powder and salt and mix until mostly combined. Fold in cinnamon chips.
- Spread batter evenly across baking pan.
- Mix all chai spices together and sprinkle across the top of the uncooked batter.
- Bake for 20 minutes, or until edges are browned and pulling away from the sides of the pan.
TIPS & TRICKS FOR THE PERFECT BLONDIES
Blondies often times call for melted butter, but with this recipe the butter is just a soft room temperature butter. Try and pull your butter and egg out about an hour before you want to start making these blondies so they are ready to go when you are.
I like to line my pan with parchment before adding the batter because it allows to pull the whole square out for easy and perfectly cut bars.
HELP! I CAN'T FIND CINNAMON CHIPS
If you can't find cinnamon chips at your store no problem. You can always sub white chocolate chips, or even just omit chips all together. There is so much flavor with the chai spice on top that you won't even know the cinnamon chips are missing.
HOW TO STORE THESE CHAI BLONDIES WITH CINNAMON CHIPS
These blondies will stay fresh on the counter for about 2-3 days if kept in an air tight container or ziplock bag. I always like to store any left over after the first day in the freezer. This way they will remain fresh for a few months. Just pull one out a bit before you want to enjoy and allow to thaw.

I really want to make these but don’t have a lot of the spices I need for the chai topping. I do however have a chai spice blend. Could I use that instead? Also thinking of adding salted caramel chips from Trader Joe’s as I can’t find cinnamon chips. How do you think they would work together?

Yes you could absolutely use the chai blend you have! I would maybe add some sugar to it to leave it a bit sweeter, and the caramel chips would be fabulous!! You could even omit chips all together and they would still be really good!
