These strawberry chocolate cookies are a chewy cookie filled with freeze dried strawberries and lots of chocolate. They taste like a chocolate covered strawberry in cookie form.

Strawberry chocolate cookies are an easy to make cookie that combines sweet chocolate and vibrant strawberries for the perfect homemade cookie. Using freeze dried strawberries helps to keep a balanced flavor of strawberry throughout without adding too much moisture from a fresh strawberry.

Ingredient Notes
Full ingredient measurements and instructions can be found in the recipe card below.
- Butter: I love using salted butter in my cookies.
- Sugars: You will use a combo of both granulated and brown sugar.
- Freeze Dried Strawberries: You will break these up so there are smaller and larger pieces along with some crumbs to disperse through the whole cookie.
- Chocolate: My favorite chocolate is milk chocolate, but these work well with dark, semi sweet and white chocolate as well.

Recipe Instructions
Step 1: Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, 3 to 4 minutes. Add egg and vanilla and mix until smooth on low speed.


Step 2: Slowly mix in baking soda, salt and flour, being careful not to over mix. I usually stop when I still have some flour remnants around the bowl. Fold in strawberry bits and chocolate.


Step 3: Scoop the dough into large cookie balls using a ¼ cup scoop and place 6 per cookie sheet. Sprinkle with flaked sea salt.
Step 4: Bake cookies for 11-13 minutes or until a light golden brown around the edges. Sprinkle with extra salt flakes after baking if needed.


Expert Baking Tips
- Make sure that your butter isn't so soft that you can really push through it. You want it to still be somewhat firm.
- If your cookies don't come out in a perfect circle, I like to take a spatula and circle the rim of the cookie to bring in any spots that have spread a little too far.
- I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

FAQ
I wouldn't suggest using fresh strawberries because of the amount of moisture that is in them.
Yes, just sub in gluten free 1:1 flour where all-purpose is called for.
The usual reason for this is not enough flour. I highly suggest weighing your ingredients to help with that.

Storing & Freezing
Strawberry chocolate cookies will remain fresh if stored in an airtight container at room temperature for 3-4 days. You can also prep the cookie dough in advance and store it in the fridge for up to a week.
You can freeze your cookies in an airtight container for 2-3 months with them remaining fresh. You can also freeze the cookie dough balls if you would like to bake them one at a time.

Strawberry Chocolate Cookies
Ingredients
- ¾ cup (170.25 g) butter room temp
- ½ cup (100 g) granulated sugar
- ¾ cup (165 g) brown sugar
- 1 large egg room temp
- 2 teaspoon vanilla
- 2 cups (280 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon (0.5 teaspoon) salt
- 1 oz (30 g) freeze dried strawberries broken into small pieces
- 1 cup (180 g) chocolate chips or chopped chocolate
- flaked sea salt for sprinkling on top
Instructions
