Ingredient Notes

- Butter: I love using salted butter in my baking.
- Sugars: You will use a small amount of both granulated and brown sugar.
- Egg: You will only use the yolk.
- Vanilla: I love using vanilla bean paste in these for the great vanilla flavor and the pretty flecks.
- Flour: If you have a scale weighing your flour is suggested. You're using such a small amount, a little too much or too little can greatly affect the cookies.

Recipe Instructions
Step 1: Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, about 3 minutes. You can also mix this by hand. Add egg yolk and vanilla and mix again.
Step 2: Slowly mix in baking soda, salt and flour until combined.


Step 3: Scoop the dough into 4 large balls, and roll in extra sugar.
Step 4: Place cookie dough balls on your lined baking sheet. Bake the cookies for 10-13 minutes. You're looking for a nice light golden brown around the edges, and some crackling along the top.


Expert Baking Tips
- If your cookies don't come out in a perfect circle, just take a spatula or spoon and circle around them while they're still hot, right out of the oven.
- I like to sprinkle the cookies with extra sugar once I pull them out of the oven.
- I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don't have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.

FAQ
Yes! If doubling, use one large egg instead of two yolks.
Generally if your cookies spread out too thin it is because they don't have enough flour. Try adding one extra tablespoon next time.
You have probably added a bit too m much flour if your dough is crumbly. If you don't want to start over just add a splash or two of milk until your dough comes together.

Storing
Small batch chewy sugar cookies will remain fresh if stored in an airtight container at room temperature for 2-3 days. You can also prep the cookie dough in advance and store it in the fridge for about a week.
