White Chocolate Cranberry Orange Cookies

These white chocolate cranberry orange cookies combine a bright orange flavor with a little bit of sweet and tart from the dried cranberries, white chocolate chips and coconut. They're chewy, sweet and filled with holiday flavor.

Ingredients
 

  • ¾ cup (150 g) granulated sugar
  • ¼ cup (55 g) brown sugar
  • 1 tablespoon orange zest about a whole medium size orange
  • ½ cup (113.5 g) salted butter room temperature
  • 1 large egg room temperature
  • 1 tsp (1 teaspoon) vanilla
  • teaspoon (1.5 teaspoon) orange juice
  • ½ teaspoon (0.5 teaspoon) salt
  • ½ teaspoon (0.5 teaspoon) baking soda
  • ½ teaspoon (0.5 teaspoon) baking powder
  • cups (210 g) all-purpose flour
  • ½ cup (60.61 g) dried cranberries, chopped up
  • ½ cup (90 g) white chocolate chips
  • ¾ cup (67.5 g) sweetened shredded coconut

Instructions
 

  • In the bowl of a stand mixer add both sugars and orange zest. Rub together with your fingers for 2-3 minutes until it becomes fragrant and the zest is mixed into the sugar. Add the butter and beat until light and airy, about 3 minutes. Add the egg, vanilla and orange juice and mix again.
  • Slowly mix in salt, baking soda, baking powder and flour, being careful not to over mix. I usually stop when I still have some flour remnants around the bowl.
  • Chop up the dried cranberries and add to the dough along with the white chocolate chips and coconut.
  • Scoop the dough into large balls, I like to use a 3 tablespoon cookie scoop for these. Chill the dough for 2-24 hours if you have the time.
  • Preheat oven to 350 F. Line 2 baking sheets with parchment paper.
  • Place 6 cookie dough balls on your lined baking sheet. Bake the cookies for 11-13 minutes. You're looking for a nice light golden brown around the edges. Allow cookies to cool.

Notes

I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.
