Homemade Toffee Bits

Brooke Homec
Homemade toffee bits are fairly simple to make using 3 basic ingredients and 15 minutes. They're buttery and sweet, a great addition to cookies, pies, brownies or on top of ice cream!

Ingredients

  • ½ cup (113.5 g) salted butter
  • 1 cup (220 g) brown sugar
  • 1 teaspoon salt

Instructions

  • Line your baking sheet with parchment paper or a silpat and set aside.
  • Place your butter in a small saucepan and melt over medium heat.
  • Once your butter is mostly melted add in your brown sugar and salt and start whisking. You will want to continue whisking the whole time it is cooking so that it doesn’t separate or burn. If you have a candy thermometer you are whisking until it is 305-310 degrees. If you don’t have one you are whisking for about 8-10 minutes, or until it thickens, starts to bubble and turns a golden glossy color.
  • As soon as it is done pour your hot toffee onto your prepared baking pan and spread as thin as possible. Then allow it to sit and set.
  • Once it’s cooled and hardened, break into very small pieces. I use a mallet or meat tenderizer, but a rolling pin, glass or anything heavy enough to break it up.

Notes

If your toffee starts to separate while you are cooking, remove it from heat and continue to stir it until it comes back together. Then add it back to the heat and continue the process.
Your toffee will set up quickly, so once you remove it from the heat work quickly to spread it into a thin layer on the pan.
