Easy Almond Coconut Granola

This is hands down the best granola ever. The flavors of toasted coconut, almonds and oats is so perfect. Use to top your ice cream, yogurt bowls or even just eat by the handfuls.

Ingredients
 

  • 3 cups (243 g) old fashioned oats
  • 1 cup (108 g) slivered almonds
  • 1 cup (80 g) coconut
  • 3 tablespoon flour all purpose, wheat, coconut, almond.
  • ½ cup (112 g) maple syrup
  • cup (72.67 g) coconut oil
  • 1 teaspoon almond extract
  • 1 tsp (1 teaspoon) cinnamon
  • teaspoon (0.13 teaspoon) salt
  • ½ cup (72.5 g) golden raisins

Instructions
 

  • Preheat oven to 300 F. Line a baking sheet with parchment paper.
  • Mix oats, almonds, coconut and peptides/flour together in a medium size bowl.
  • In a seperate bowl or large measuring cup whisk together maple syrup, coconut oil, almond extract, cinnamon and salt.
  • Add liquid mixture to dry mixture and stir until everything is evenly coated.
  • Spread onto baking sheet.
  • Bake for 40-50 minutes, stirring half way through.
  • Once finished cooking stir in raisins.
  • Let cool, and store in an airtight container.

Notes

I have made this using all different types of flour and it turns out the great every time.
I have added three scoops of collagen peptides instead of flour, and was also totally happy with the results. It works perfectly as a thickening and coating agent.
Feel free to omit raisins, coconut or even almonds. Change them out for your favorite nut or add any dried fruit you want. This recipe is so easy to adjust. Even add some chocolate chips or cocoa nibs if you love having chocolate in your granola.
I have given both cups and grams as measurements. Grams will be more precise, but either are just fine.
This lasts for a few months if sealed in an airtight container. Or store in the freezer for longer lasting.
