These chewy monster cookies are loaded with peanut butter, oats, m&m's and chocolate chips. The perfect cookie to make you feel like a kid again, and the best part is they are made without flour, so they're gluten free.
3cups(260g)old fashioned oats GF if you need them to be
½cup(85g)chocolate chips
½cup(95g)m&m's
flaked salt to top
Instructions
Preheat oven to 350° F. Line 2 baking sheets with parchment paper.
In the bowl of a stand mixer, cream together butter and sugars until smooth, about 3-4 minutes.
Add eggs, one at a time, mixing in between. Then add vanilla, peanut butter, and baking soda and mix on medium speed until smooth.
Stir in oats, m&m's and chocolate chips until well combined.
Scoop dough using a medium to large cookie scoop, I like to use a 3 tablespoon size for these cookies. Salt on top.
Bake for 8-10 minutes, depending on size, or until a light golden brown around the edges and top. Salt a little more if you love it like me!
Notes
If you need these cookies to be GF, make sure that your oats are GF.You can use any kind of chocolate chips for this recipe, and or all chocolate chips or m&m's. I like having a mix.The butter and eggs should not be completely chilled from the fridge, but should also not be room temperature. I try to let them sit out for about 15-30 minutes before I begin my cookie making!I have given both cups and grams as measurements. Grams will be more precise. If you don’t have a kitchen scale, no problem!
