Easy Apple Oatmeal Cake

This easy apple oatmeal cake is loaded with tart apples, hearty oats, warm spices and a simple cinnamon sugar topping. A quick single layer snack cake you can enjoy for breakfast, a snack or dessert with a dollop of whipped cream.

Ingredients
 

  • ½ cup (52 g) old-fashioned oats
  • ¾ cup (177.44 ml) boiling water
  • ¼ cup (56.75 g) butter room temperature
  • ½ cup (110 g) brown sugar
  • ½ cup (100 g) granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla
  • ½ teaspoon (0.5 teaspoon) baking powder
  • ¼ teaspoon (0.25 teaspoon) baking soda
  • ¼ teaspoon (0.25 teaspoon) salt
  • 1 teaspoon cinnamon
  • teaspoon (0.13 teaspoon) nutmeg
  • ¾ cup (105 g) all-purpose flour
  • 1 large apple peeled and diced small
  • 2 tablespoons granulated sugar for topping
  • 1 teaspoon cinnamon for topping

Instructions
 

  • Preheat oven to 350 F. Spray an 8 inch baking pan with cooking spray and line with parchment paper.
  • Place oats in a bowl and pour boiling water over it. Set aside and allow to seap up the water and cool.
  • In a medium size bowl cream together butter and sugars. Add in egg and vanilla and beat until light.
  • Add baking powder, baking soda, salt, cinnamon, nutmeg and flour and mix until combined. Stir in cooled oats.
  • Fold in diced apples. Pour and smooth batter into prepared pan.
  • Stir together the 2 tablespoons of sugar and 1 teaspoon of cinnamon. Sprinkle on top of the cake batter.
  • Bake for 33-38 minutes, or until a toothpick comes out clean. The sugar topping will form a hard top, but you can just stick a toothpick through that if needed.

Notes

You can skip the cinnamon sugar topping and sprinkle with powdered sugar after it's cooled. Or, a simple glaze on top would also be delicious.
½ cup of chopped nuts would be a great addition to this cake as well.
I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.
