This easy apple oatmeal cake is loaded with tart apples, hearty oats, warm spices and a simple cinnamon sugar topping. A quick single layer snack cake you can enjoy for breakfast, a snack or dessert with a dollop of whipped cream.
Preheat oven to 350 F. Spray an 8 inch baking pan with cooking spray and line with parchment paper.
Place oats in a bowl and pour boiling water over it. Set aside and allow to seap up the water and cool.
In a medium size bowl cream together butter and sugars. Add in egg and vanilla and beat until light.
Add baking powder, baking soda, salt, cinnamon, nutmeg and flour and mix until combined. Stir in cooled oats.
Fold in diced apples. Pour and smooth batter into prepared pan.
Stir together the 2 tablespoons of sugar and 1 teaspoon of cinnamon. Sprinkle on top of the cake batter.
Bake for 33-38 minutes, or until a toothpick comes out clean. The sugar topping will form a hard top, but you can just stick a toothpick through that if needed.
Notes
You can skip the cinnamon sugar topping and sprinkle with powdered sugar after it's cooled. Or, a simple glaze on top would also be delicious.½ cup of chopped nuts would be a great addition to this cake as well.I have given both cups and grams as measurements. Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, no problem! Just lightly spoon flour into your measuring cup to insure its not packed in there. Light and fluffy is the key.
