Instructions
Place butter into a large mug and microwave for 15-20 seconds to melt. Stir diced apples into warm butter to help soften the apples.
Add the vanilla and milk and mix into buttery apples. Then add brown sugar, cinnamon, salt, baking powder and flour and mix together with a fork or spoon.
Microwave for 60-70 seconds, depending on your microwave. I watch mine and stop it about 60 seconds, when it is starting to reach maximum height. You can put it back in for another 10 seconds, until just the top still looks a little wet in the middle.
Allow to cool before topping or eating.
Notes
Make sure not to overcook this mug cake. Having it slightly wet in the middle is ok because it will continue to cook as it cools.Try not to over-mix the cake batter or it will make it less tender.Top with ice cream, whip cream, or caramel sauce.
