These chocolate covered pretzel rods are swirled with a thick rope of caramel, dipped in milk chocolate and drizzled with white chocolate. They're the perfect holiday gift idea or snack that everyone loves!
11ounces(311.85g)peter's caramelor other soft block of moldable caramel
22pretzel rods
16ounces(453.59g)milk chocolateI used one lb plus bar from trader joes
¼cup(45g)white chocolate chips for drizzling on top
Instructions
Take a cookie sheet and turn it over so there is a ledge, and place a piece of parchment paper on it.
Take about ½ an ounce of caramel in your hand and roll to make it like a rope. Wrap the caramel down the pretzel rod, securing both ends, and leaving about 3 inches on the bottom to be able to hold the pretzel. Wrap all pretzels in caramel before melting chocolate.
Chop up chocolate bar into small pieces so its easier to melt. Place chocolate in a microwave safe bowl and microwave for 45 seconds, stir and then continue in 15 second intervals until all melted. You do not want to over cook the chocolate or it will seize and turn tough.
Pour chocolate into a cup that is at least as tall at the pretzel rods. Dip each pretzel into the cup, allowing any excess chocolate to drip off. Set each pretzel back onto the parchment paper to set up.
Melt white chocolate in a small bowl in the microwave for about 30 seconds, or until melted. Drizzle white chocolate onto pretzels. Allow them to sit and firm up completely before eating.
Notes
I have found Peter's Caramel to be well worth it for these pretzels. It is such a good caramel and although you have to buy it in a large block you can use the rest for caramel apples, carmelitas, or melt and pour on ice cream etc.Feel free to top the melted chocolate with sprinkles, peppermint candy pieces, coconut, or anything that sounds good to you!I love placing these into a large cellophane bag and gifting them to people during the holidays.
