Spray an 9x13 pan with cooking spray and set aside. You can also line the pan with parchment paper.
Start by melting the butter. You'll take 4 tbsp. of butter and melt in a medium saucepan over medium/low heat.
Turn heat to low and add marshmallows and salt to pot and stir until marshmallows are completely melted.
Remove from heat and add rice krispies and stir until completely coated.
Pour mixture into prepared pan. Press down firmly to create and even layer and compact rice krispie treats. Allow to cool/set completely before dipping in chocolate.
Melt chopped chocolate and coconut oil in a microwave safe bowl. I usually like to stir after the first 30 seconds, and then every 15 seconds after until completely melted.
Cut rice krispie treats into 12 equal rectangles. Dip the corner of each rice krispie treat into melted chocolate and then set on parchment paper to set. If your house is too warm you may need to stick them in the fridge for about 30 minutes to allow the chocolate to set up.
I like to use a 9x13 pan for these so that they are a thinner rice krispie treat which makes them easier to eat when dipped, but feel free to make them thicker if you prefer.You can use any kind of chocolate that you prefer, and even use chocolate chips if that's what you have on hand. Chocolate bars melt easier, but either will work.These will remain fresh for 3-4 days if kept in an airtight container.
