No bake pumpkin cheesecake bars are a light and creamy spiced pumpkin cheesecake with a biscoff cookie crust.


ingredients: -Butter -Biscoff Cookies -Cream Cheese -Brown Sugar -Granulated Sugar -Vanilla -Salt -Pumpkin Spice -Whipping Cream

STEP ONE: Crush biscoff cookies into crumbs and add melted butter & salt. 

STEP two: Press crumbs into the bottom of an 8" pan and freeze for 20 min.

STEP three: cream together cream cheese and sugars until smooth.

STEP four: Mix in pumpkin and pumpkin pie spice. Set aside.

STEP five: In another bowl beat whipping cream until stiff peaks form.

STEP six: fold whipped cream into pumpkin cream cheese mixture.

STEP seven: smooth cheesecake over frozen crust and chill for 6 hours.

STEP eight: cut into squares and top with extra whipped cream.
