Lemon Blackberry Layer Cake
This easy lemon blackberry layer cake is bursting with fresh blackberries and a sweet lemon flavor. Topped with a homemade lemon cream cheese frosting.
STEP 1: Rub lemon zest and sugar together to activate the lemon zest.
STEP 2: Beat sugar, zest, butter and oil until light and fluffy.
STEP 3: Add lemon juice & vanilla. Mix in dry ingredients and buttermilk.
STEP 4: Toss blackberries in flour. Fold into batter.
STEP 5: Bake cake in three 8" pans. Cool on racks.
STEP 6: Prepare frosting & assemble cake.
STEP 7: Decorate with lemons and berries. ENJOY!
