Carrot Cake Cookies


These carrot cake cookies are a soft, spiced cookie loaded with brown butter, carrots and oats, topped with a brown butter cream cheese frosting and some toasted coconut.


ingredients: -Butter -Sugar -Brown Sugar -Eggs -Vanilla -Carrots -Baking Soda -Salt -Cinnamon -Ginger -Nutmeg -Flour  -Oats -Cream Cheese -Powdered Sugar

STEP ONE: Start with browning your butter and then chilling to solidify again.

STEP two: Cream together brown butter and both sugars for 3-4 minutes.

STEP three: Add eggs, vanilla and grated carrots and mix together.

STEP four: add dry ingredients and then scoop into balls to chill for 2+ hours.

STEP five: Bake cookies at 350 for  11-14 minutes.

STEP six: Beat cream cheese, brown butter, vanilla, salt and powdered sugar to make the buttercream.

STEP seven: Frost cookies with buttercream and top with coconut.
