Carrot Cake Cookies
These carrot cake cookies are a soft, spiced cookie loaded with brown butter, carrots and oats, topped with a brown butter cream cheese frosting and some toasted coconut.
STEP ONE: S
tart with browning your butter and then chilling to solidify again.
STEP two: C
ream together brown butter and both sugars for 3-4 minutes.
STEP three: A
dd eggs, vanilla and grated carrots and mix together.
STEP four: a
dd dry ingredients and then scoop into balls to chill for 2+ hours.
STEP five: B
ake cookies at 350 for

eat cream cheese, brown butter, vanilla, salt and powdered sugar to make the buttercream.
STEP seven: F
rost cookies with buttercream and top with coconut.
