almond raspberry cake


This almond raspberry cake is a buttery almond flavored cake topped with a raspberry compote and an almond crumble topping.


STEP ONE: start by making a raspberry compote by cooking raspberries, brown sugar, lemon juice and cornstarch.

STEP two: make the cake layer. Mix together butter, sugar, eggs, vanilla and almond, and buttermilk. Fold in dry ingredients.

STEP three: make the almond crumb top. Mix together brown sugar, flour, salt and almond slices. Mix in melted butter.

STEP four: assemble the cake layering the cake batter on the bottom and placing the raspberry compote on top.

STEP five: Sprinkle the almond crumble on top of the raspberry compote. 

STEP six: bake the cake for 40-50 minutes. Cool completely. 

once completely cool, sprinkle with powdered sugar  and serve.
